So I upgraded to a new phone, but since that happened, both my Apple card and Apple cash card are missing transactions. If I use Apple Cash card, no new transactions are listed. The Apple card on the other hand is not showing anything inside the weekly or monthly activities.

I tried to removed the card and re-add it again, but no luck. Today I spent an hour chatting with support, also no luck. They setup a call back call with a life representative, so we will see how that goes.

Does anyone have any experience with such situation?

what did you do with your old phone to remove from it all cards in Wallet and sign out of Find My and apple ID?

Yup. The old phone is used by my daughter so we still have it. I signed out from icloud and reset it to defaults.

This is happening to me as well! I was about to try chatting with online support but it looks like you already did that with no fix.

Quick update- Apple never called as scheduled. My problem still persists. I will try to call them tomorrow or Friday.

Another update. Still no call back from Apple, but I was able to fix my problem myself. I created the latest backup and then restored it on our spare iPhone and all of sudden all the transactions for Apple Card and Apple Cash showed up on my backup phone and my primary phone. Go figure!

Yup, that is exactly what I did. So far so good. I already logged out from my old iPhone and wiped it out again and things are working as expected. Go figure. I could had probably achieved the same end result by logging out and in on new phone.

So I did fix my issue with Apple Card transactions not showing up anymore in the Wallet app after getting a new iPhone. It's almost similar to what @mlody did. I created a backup of the new iPhone 11 Pro, then erased the iPhone 11 Pro. My backup phone (iPhone SE) started showing the transactions again in the Wallet app after doing these steps. I then restored my iPhone 11 Pro with the backup. My iPhone 11 Pro now also shows the Apple Card transactions again.

When I was setting up the iPhone 11 Pro, I transferred all the settings and phone data using the 'phone to phone' transfer option. I'm wondering if that caused the Apple Card/Wallet app weirdness. Maybe if I used the back up to setup my phone, I wouldn't encounter this issue. Just a guess on my part but that seems to be the explanation based on what I experienced.
