I'm buying a new Apple Watch and I'll consider buying the Apple Care+.

If I buy the 2 years signature, I'll able to continue paying for it after the final date?

I mean I need to go to Apple Store and contract the plan, or I can just continue paying for it?

How is this process?

Yes you can now pay for Apple insurance monthly in perpetuity for as long as you want.
I don’t know the details, just that you can now do it.

Once the two years runs out, within 30 days download the Apple Support app and you’ll be able to add the monthly AppleCare. It’ll be charged to your card on file in your Apple ID like any other subscription and you can cancel anytime. Once you cancel there are restrictions on going back on unlike other subscriptions.
