Long story short, my first AppleCare replacement was a dud and this one is on 9.1. Maybe it was just me, but 9.3.1 seemed buggy. Should I just leave it?

And I had to restore as a brand new iPad because my backups were all 9.3 and 9.3.1.

9.3.1 is a lot more stable than 9.1. Also, 9.1 is out of date with security updates. My only complaint in 9.3.1 was battery life. But I've been having pretty decent battery life with 9.3.2B4. Both Air 2 and iPhone 6s.

If you are not interested by jailbreaking, I advice you to upgrade. If you are however, stay on 9.1.

Is there anything worth jailbreaking for? I would like game emulators, do those work on a jailbroken IOS device on 9.1?

If I do jailbreak it and have an issue with this one or I break the screen, will I have issues with another replacement if I restore it back?

I don't know about all emulators but I know that you can have a GBA and NDS emulator without jailbreaking.

Apple theoretically doesn't repair jailbroken devices however you can restore your device whenever you want which will wipe all your data and remove the jailbreak so you could send it to Apple for any repair and they will never know that the device was jailbroken before.
