From the date you activated the device if you bought from anybody but Apple.
If you bought from Apple, then from the date it shipped I think. For retail purchases, from the date you purchased it.
I should have mentioned that I bought from Apple, picked up in store, so regardless if I purchase the coverage now or on the 60th day, the 2 years has already started?
I’m confused because this is what it says on Apple’s website:
“AppleCare+ extends your iPad and Apple Pencil coverage to two years from your AppleCare+ purchase date“.
Yes it is from the purchase date. Go with what Apple is saying officially on their website.

It's purchase/activation date of the iPad or any device. I thought I would do AC+ at the second to last day of it being eligible, and my coverage is starting from 2 months back.

This is how it was with my iPad Pro 10.5 when I purchased it.
April 7, 2018. I bought AC+ 2 days before the cutoff time, which would have been beginning of June. I thought AC+ coverage would start/end June 2020, but it ends April 2020, the initial date of purchase/activation through Apple's servers.
Well, I know that now. I just thought I'd be getting 2 months added on when purchasing AC+ "later".
This is an error on Apple's part then. Both my iMac and iPhone AppleCare+ coverages started from the date I purchased the coverage, not the date of the purchase of the device.
