I’m looking for some clarification. If I purchase AC+ for my iPad during the 60 day period after the initial device purchase, does the coverage extend for 2 years after its purchase or from the purchase of the device?

From the date you activated the device if you bought from anybody but Apple.

If you bought from Apple, then from the date it shipped I think. For retail purchases, from the date you purchased it.

I should have mentioned that I bought from Apple, picked up in store, so regardless if I purchase the coverage now or on the 60th day, the 2 years has already started?
 

I’m confused because this is what it says on Apple’s website:
“AppleCare+ extends your iPad and Apple Pencil coverage to two years from your AppleCare+ purchase date“.

Yes it is from the purchase date. Go with what Apple is saying officially on their website.
 
It's purchase/activation date of the iPad or any device. I thought I would do AC+ at the second to last day of it being eligible, and my coverage is starting from 2 months back.

This is an error on Apple's part then. Both my iMac and iPhone AppleCare+ coverages started from the date I purchased the coverage, not the date of the purchase of the device.
 
From the AppleCare+ terms and conditions:

2. Plan Term and Renewal
Plan coverage begins when you purchase the Plan and continues, unless cancelled, through the date specified in your Plan Confirmation (the “Plan Term”).

For Single-Pay Plans, your Plan Term is two (2) years (or three (3) years for Apple Watch Edition or Hermès). Apple is not obligated to renew your Single-Pay Plan. If Apple does offer to renew, Apple will determine the price and terms.

That's... confusing... o_O

Yeah, and now half the people here are telling me one thing and the other half are telling me the other! I guess I'll either contact Apple directly or just wait until near the end of the 60 days and see what happens.

Well, I know that now. I just thought I'd be getting 2 months added on when purchasing AC+ "later".

Two completely contradictory situations...

Maybe it varies by country, but for the United States it states right on the AppleCare+ pages:

"AppleCare+ coverage begins on your AppleCare+ purchase date." (iPad)
"Coverage begins on your AppleCare+ purchase date." (iPhone)
"AppleCare+ for Mac extends your coverage to three years from your AppleCare+ purchase date." (iMac/Mac)

My AppleCare+ Coverage for a 2019 iMac Purchased on September 28 directly from Apple. Clearly shows that it ends 3 years after the AppleCare+ coverage purchase date, November 1, 2022.

I understand that to mean the original purchase date - which is the date of the purchase of the covered equipment.
Your plan coverage does not begin until you purchase the AppleCare+, but the term for the single-pay plan extends the warranty a full two years (3 years for certain models). The warranty period is extended from the date on the original sales reciept, not the date of the plan purchase. And, now there is the monthly AC+ plan, which makes that even a bit more confusing.
Would this be a good time to suggest that the folks that know for sure are a phone call away? - AppleCare support.
