I have no idea whether I’ll be lucky enough to score a new iPhone when preorder time rolls around. This will be my first attempt. I prefer home delivery rather than pick up at the Apple Store. Been through that drill before. However, I will not be home on the 21st on the off chance a delivery iis scheduled for that day. So I am wondering what carrier Apple uses and is a signature required for iPhone deliveries?

Yes, signature required. If you have ups choice (I think that’s the name) you can presign for it and they will leave.
 
Other option is have it delivered to a UPS Store, but I can't remember if that actually delays you by a day or not. I've had to do that in the past when I was out of town and it delivered late (on a Saturday).

Typically if you choose to have it hold at your local UPS Store then yes it will delay by a day for it to be ready for pick up. Now if you choose to pick up at your nearest UPS CC (Customer Center) then you can pick it up on the day of as that is where they scan before it goes out for delivery.
