Hi,
So im having a bit of a cleanup with my computers and internet accounts, one of the things i want to do is change my apple id from something@me.com to something@website.co.uk and change the primary email address to that also i cant seem to find where to do it.

I've gone to there but there's no edit button by my Apple ID I think it might be because it used to be part of mobile me? You can't change them I don't think

You can't modify the email address on an AppleID that is @mac.com/@me.com/@icloud.com.
