I know were still a ways away before 'Apple Intelligence' is working and shipping with iOS/macOS - but shouldn't there be a forum devoted to it? or maybe a forum off of 'Software'?

I don't see why it needs a section of the forum. Just make a thread in iOS 18?
Apple Intelligence isn’t a single feature, but more of an approach to enhance multiple apps and functions of the OS, so it’s probably best to just discuss each implementation. If you want to talk about the concept of AI, just start a thread and see if it gets traction.
This will probably be an easier question to answer when we can actually use these services (in beta let alone production).
I agree it's not a single feature. From what I gather, these services will span iOS/macOS/ipadOS so topics won't fit in any one of those forums. Shoehorning topics into some existing forum doesn't seem right.
