Apple Intelligence in UK - what exactly changes when you change region?

Hi all, is there a summary of things that change in iOS when I change my region from UK to US to enable Apple Intelligence? I already downloaded and found a few apps default the region... is there anything drastically that could cause issues?

Would like to play around with AI in the UK...
