I have a French version of the Macbook Air (with french AZERTY layout)

Is it possible to have this changed to UK standard QWERTY keyboard?

Nice circumvention of the no caps rule.

Just change it in software.

You will need to go to Apple to get a new top case installed. This will be a paid upgrade.
