If I say, stop my service, and restart at a later time, my cloud music (songs/albums i stored in the cloud over time) don't go away do they? They just wont be able to be played again until i have service?

That should be correct.

I haven't cancelled my service, but there have been times when iTunes couldn't connect to my account. During those times all of my playlists and albums remained as usual, but those added through Apple Music were greyed out. So I'm basing my advice off of those experiences.

I think it applied to songs stored in the cloud (songs I had that weren't on Apple Music or the iTunes Music Store), based off of my experience in using the service prior to Apple Music, quitting for a year, and then joining Apple Music, but I'm not 100% certain on that. If in doubt, you should be able to download those songs and store them locally, which would guard against any possible deletion from Apple's servers - they would just re-upload once you rejoined.

I let my subscription expire yesterday. My playlists were available for awhile but eventually disappeared. Not sure if they are there if I sign back up or not. It's a huge bummer because I kinda thought I would still see them but now I don't remember what songs were on them. :(

Were they lists curated by Apple, or were they custom lists that you made, yourself?

Custom playlists I had created. I received an email today saying they could only save my playlists and preferences for a "short time." I'll be signing up for one more month of AM and transfering all my playlists to Spotify. I'm not messing with Apple Music if they are going to be like that.

UPDATE: I signed back up and my playlists were all there. (I was only canceled for a couple of days) I used Soundiiz to transfer all my playlists one at a time for free. There were a few songs it didn't match up but let me know which ones and a quick search found them. Not sure why they didn't match up. I'm going to see if I can save all my playlists as CSV or XML files. I'm also going to look to see if IFTTT has a way of creating Google spreadsheets of songs added to playlists in Spotify. This way I can have some sort of back up.

It's kind of shady and terrible that a company would wipe hold the threat of wiping your data if you don't stay subscribed. I get that can't store it forever but Spotify has kept all my stuff the way I left it for almost 2 years. It's definitely not a good look for Apple. They have disappointed more and more lately.

I agree, that's pretty bad. Greying songs out as being inaccessible is one thing that is understandable, but removing your playlists entirely is another level. I'm sorry you had to go through that, and thank you for sharing your experience.
