I've got ˜£20 on my Oyster card, but I plan on using Apple Pay from now on. How can this money be transferred? Is there an Oyster card I can add to Wallet?

Ask for a refund and then you can link your debit card to Apple Pay and use it going forward. As far as I know there is no way to link your oyster to Apple Pay.

I've just realised, and applied for, the refund.

I've already got my debit card added to Apple Pay, and I've been using it regularly for payments, just not on the tube. I've been reading on iMore that:

Oyster Card users can see how much balance they have left on their cards and how much a journey cost every time they pass the barriers.

Although I'm confused how Apple Pay can work out your remaining balance on your Oyster Card?

I've also had on he TFL website that:

I assume I would need to add the same contactless debit card on the TFL website, that I use with Apple Pay? Would I have to sign into the website to view this, or would the information be available elsewhere?

Apple Pay doesn't know anything about balances that you may have on Oyster Cards. When you swipe an Oyster Card at a barrier it'll show you the remaining balance (IIRC, it's been a while since I cancelled mine). When you swipe a phone with Apple Pay you don't get any balance information, since there is no concept of a balance, just individual transactions debited from your linked account.

You're right that you need to add the same debit card on the TfL website, and yes you need to sign in to the website to view the information. I'm not aware of an official TfL mobile app for viewing your journey history and spend, but there may be third party apps that enable this.

Ok forget the Oyster card as you don't want to use that.

Your main Apple Pay card, the default one. If you log into tfl and add that card when you tap in and tap out with Apple Pay you will be able to log in and track the journey like you can with an oyster. Obviously it has the advantage that if you can't tap out etc you can claim.

However if you decide not to put the card into tfl then you can still use it as normal it's just claims become a pain.

Out of interest, I also read that, as you use Apple Pay throughout the week on the underground, TFL automatically calculates the cheapest fare, by possibly applying a weekly travel rate? Has anyone seen this rate applied and can explain how it works?
