Apple Pay Germany

Probably because it really isn't fully rolled out yet. I live in Kaiserslautern and nobody here, that I have seen, takes it yet. Credit cards at shops are kind of a new feature, 10 years ago, you had to have an EC card or cash because merchants couldn't afford the fees (or didn't want to pay). I suspect that it will slowly catch on and eventually Apple will be comfortable with announcing it.

Has acceptance of Visa and MasterCard improved in Germany in the past few years? I remember visiting a couple of years ago and a lot of places only accepted either cash or at best an EC card.
 
Yes credit card acceptance has improved during the last two years because EU regulations put a cap on fees. There are a lot of terminals where you can pay contactless with your nfc enabled card. These are mostly in supermarkets, don’t expect to pay contactless in a restaurant in Germany.
But there is still a long way to go as many people still seem to prefer cash.
Apple Pay works with most contactless terminals in Germany so some Germans use Apple Pay already with a French/Irish credit card from a provider called “boon.”. So it is possible to use Apple Pay in Germany right now, just not with a German credit card.

It is a lot better now. There are still some places that don't accept them, but they are in the minority now. The biggest reason is that the shops couldn't afford the fees. I know a few (my auto shop for sure) that will charge you 3% more if you use a card so they can make the money back.
