There are lots of questions online about how to update the expiry date and security ID for a credit card in Apple Wallet. The instructions from Apple say that when your credit card is reissued, the card number and new expiration date “should be updated automatically”. If not you might have to remove your old card and reinstall with the new expiry date and security code.

Is there any way to tell if the expiry date has indeed been updated. Would we get a warning that the card has expired before a merchant rejects. There doesn‘t appear to be a way to check the expiry date or security code online or in settings to see if it has been updated.

As you say, Apple Pay will update automatically. There's no way to check that this has happened.

If it doesn't happen, the transaction will decline. But, this has never happened to me...so I have faith in it updating automatically.

I figured that but wondered if the card's expiry date has passed and if the update process has failed, whether it would tell me it was expired like it does for Expired Passes. That would make sense vs finding out from a merchant decline.
