Apple Server Maintenance...

I know Apple does maintenance on the server on a specific day of the week, but when? It's 2:48 AM on the east coast (technically Sunday morning), and I think Apple does maintenance on Sunday morning/late Saturday night (PST), am I right? I see this for store.apple.com, and I know it's not a product intro. They always introduce products on Tuesdays, and a few other days of the week...
