is there a way to find out if your local apple store is selling those demo computers or display computers, or is it the computers they sell as certified?

Just go to the Apple Store online and click the link in the lower left column for
Refurbished Mac.

You're better off with a perfect bench tested refurb.

Floor models have to be reformatted and cleaned, so a lot of pristine floor models
end up as refurbs anyway.

Not to mention, sometimes, but dont get your hopes up, there have been reports of unexpected upgrades here on these forums. With such upgrades as better hard drives or more RAM.

well, in the actual apple stores you can go to, they have these sales called "Fire Sales" where they sell the display models, but they are not advertised and are spontanous. The best thing would be to ask your apple employee. And i think the prices are refurb or a tad less
