I meant to post this the other week...

But I visited a UK retail Apple Store the other week to play with the iMacs and checked out the specs...To my surprised I noticed all the display models had 2gb of RAM installed!

Surely they should only be demonstrating what you would be getting?

In the strict sense you are correct. However, they also have much more software loaded onto these machines than most people are likely to have. As customers are constantly playing with these programs, the extra RAM provides a startup experience more like what they can expect on a personal machine.

Now that all Apple computers come with at least a GB of RAM, this is not as much of an issue as in the 512MB days.

Companies always give the top spec cars to magazines to review :D

It's just how the commercial world works. Anyway, 2gig RAM won't make any difference to the people just having a quick go on the machine in the store.
