When the apple store shuts down to do updates....
how long does it take them to go back up...
like after tomorrow's event... when will we be able to get back onto the store to see wut happened?

Usually the store come up a few minutes after an event. Other updates can take between a few minutes to several hours. But event-day updates are usually immediate.

Ditto.

I have to think that Apple has the updated site waiting to go today and all they need to do is flip a switch to point to it. No need to wait for new content to upload etc.

Yea, they just shutdown the store to prevent confusion when the announcements are made.
