Hello, I bought an iPad Air 2019 at the apple store using the student discount so i got a free pair of headphones. If i want to take this iPad back to them and get a different model will i have to give up the headphones?

You can't return that iPad without returning the headphones. You can exchange it for the same model if there's something wrong with yours though. Apple EDU regards that purchase as one item when you do a return.
