Would it be possible to upgrade the 1st gen Apple TV's CPU,GPU or RAM (I don't care how difficult it would be etc.) ?

RAM, maybe, I think some people have done this but you need special tools(reflow I think).

There is also a "Hack" where you replace the wireless Mini pci with a broadcom card for viewing 1080p content.

Thanks, I heard of that hack too and I was wondering if you could use that to upgrade the GPU.

Depends, what do you want to do with it, if it runs AppleTv OS and some fiddling with the software it will play HD.
I have one and installed OS X on it but it is slow.

I was going to buy one to run OS X on (I'm cheap, I know :p) . Oh, well I'll just wait til the new iMacs come out - HURRY UP APPLE!!!
 
Considering no one has hacked these to run an OS newer than OS X 10.5 that I know of you will be stuck with exactly the same problems as running Leopard on a PPC Mac. Even if you could install a newer OS you would be stuck with Snow Leopard as the Apple TV has a 32bit CPU.

You're best off looking for a cheap second hand intel Mac Mini, the Apple TV is not really designed for personal computing even if its capable of it. Even if you installed Snow Leopard on an Apple TV it would be really slow. It's a much lower end CPU than even the first Intel Mac Mini and it has less than 1GB of RAM.
