I have speakers connected to airport express. From Itunes I can play music on them, but cant find any settings to let know apple tv to output on airplay speakers, not tv. Or that is not even possible?
 
I don't believe that's possible.

If you want to play music on the ATV and the Airplay speakers, you can select multiple speakers to output in iTunes on your computer.

As stated you can't 'redirect' the sound from the Apple TV to the Airplay speakers, in other words it's not possible to watch a film and have the sound come out of your Airplay speakers AFAIK.

Don't be confused by the interface on the Apple TV, it's still just a device that your media is streamed to, the same as the Airport Express.
 
Another question about :apple:TV sound (I don't have one yet): Since there's just a single HDMI output, if that goes to my HDTV then I can't use my surround sound amp/speaker setup with it right?

ATV also has an optical audio output which you can route to your surround sound system.
