I'm fairly intrigued by the Apple TV and was curious how the Podcasts feature works. Does it only present you a directory, or can you add in any specific URLs if a particular podcast is not in the directory?

Both the new and original Apple TV use a directory, but you can also download and stream any podcast that can be accesses through iTunes (assuming that the format will play on the apple TV -- so no Flash videos).

Personally, I add my Podcasts to my "favorites" which gives me a quick view of favorited Podcasts, notifies me of episodes I haven't watched (even though that feature is currently broken), and lets me stream them all without downloading anything permanently.
