Currently, I can use the Apple TV remote to control the volume on my LG C7 OLED TV when I use the TV internal speakers, but what if I connect an LG sound-bar? will I still be able to control the volume of the sound-bar using the Apple TV remote?

I am asking because I am planning to buy an LG SK5 sound-bar but I don’t want to use another remote, I like simplicity and convenience more than anything, spoiled by Apple I guess.

Yes. This is exactly what HDMI-CEC was designed to do.

ATV, and your TV are currently using HDMI-CEC to control the power and sound using the ATV remote.

The specs on the SK5 state that it supports ARC and SIMPLINK (HDMI-CEC). So, assuming the TV supports ARC as well (Audio Return Channel), it will send sound to the bar.

So, the setup would be ATV <> LG C7 (HDMI2 probably), then HDMI1\ARC <> SK5.

There may be a step to enable SIMPLINK on the bar, but otherwise should be a straight shot. So, when you power on the ATV, it will power on the TV which in turn will power on the bar. Same thing in reverse. ATV remote volume controls will send the signal to the TV which will relay it to the bar.
