I use AppleTV with a Sonos soundbar and want headphones to go with it. If I get the Sonos Ace, my understanding is that I only need to touch a button on the ‘phones for the speaker to go quiet and the headphones to play. No remote control nor Siri required.

What do you have to do to route sound to AirPod Max?
 
you don't even have to go into Bluetooth settings, it's available right from control center.

if you've got other Apple products, all of Apple's (and beats) headphones will switch between them pretty seamlessly, Once they're paired with any apple device, if the headphones are powered on around any of your other apple devices, then they just show up in the audio output menu (control center on watch, iOS or tvOS, or menu bar on the Mac) you can just select and they switch. They can also auto switch, where they will jump to the latest device to start playing. You can disable auto switch on a device by device basis.
