Does anyone know anything about Apple offering the same streaming service that is provided by the NBA and MLB? Is there a chance we can purchase a package through the NFL and have every game streamed to our Apple TV (yes please!)

For the NFL - Most likely not. If it does come available, you'll most likely need DirecTV NFL Sunday Ticket ToGo.
I'm not 100% sure but the ToGo feature can only be bought with a subscription to Sunday Ticket, which in turn requires DirecTV service.
Reason I'm not 100% on that is that I think ToGo was secretly available for anyone to purchase, though it wasn't anything near cheap.

I think, if you are somehow physically unable to get DirecTV (can't see SW sky, etc) you may be able to get NFL SundayTicket ToGo separately. Otherwise, they've got the monopoly.
If you are only interested in one specific out of market team, you could find a friend/relative in that market and put a slingbox in their home. With an iPad2, you should be able to Airplay it to the ATV once iOS 5 is available. The quality isn't going to be HD, but for my purposes it is totally worth it.
When does that DirecTV contract expire? I would love to have access to NFL sunday ticket, but I can't stand DirecTV. I would probably pay $200-$300 for access on my ATV, iPhone, and iPad. I work all day on Sundays and at nights during the week so this would be awesome for me.

DirecTV recently sent out a survey asking people if they would be interested in Sunday Ticket as a standalone service on media center devices and they specifically mentioned the Apple TV. So it is something that is on their minds and quite possibly could be something Apple and the NFL/Directv could be lining up for the fall season.
It would be a blockbuster announcement if Apple could pull that off along with an announcement for ATV3 and iOS5 in September.

DirecTV pays the NFL $1 billion for the Sunday Ticket rights. The current arrangement is also approved by the network contracts. I don't think that the NFL would allow wider distribution of Sunday Ticket. It would cannibalize the network audience and would hurt netowrk advertising income. They would pass that along by reducing the multi-billion dollar contracts they pay to the NFL.
I think that this is a product that would be too popular for its own good and would threaten the extremely profitable status quo. I wouldn't hold my breath waiting for NFL on ATV.
Actually the terms of the contract Directv signed with the NFL stipulates that they are REQUIRED to set up an online streaming service of the games that does not require NFL Sunday Ticket by 2012.

I don't see anything in that link that suggests that DTV has an obligation to provide streaming to non DTV customers. I wish it did.
