Apple used my Apple Card to pay my $6.99 subscription for Office. Did not want this and checked to make sure I still have my Wellsfargo card as default.

If my Wells Fargo card is the default card in my wallet, why did Apple use my Apple Card for the subscription?

How can I stop this?
 
I thought if you have  card then all Apple transactions go via that by default. ¯\_(ツ)_/¯

The default card in Wallet is not necessarily your default payment method for App Store purchases. Check that in your App Store account settings.

You have to go to : Settings > your name at the top > Payments & Shipping

Once there you need to edit the payment options listed at the top of the page. Place your Wells Fargo Card in the default/top position.
