How are the AirPods with the watch? I've seen a few screenshots of being able to pick up a call directly to the pods. I.e. You have two options when a call comes in "red decline and green with AirPods" vs the "red and green."

Do the pods need to be already put in your ears for the "green with AirPods" option to work or do you have time to put the pods in your ears?

At present, I can't get mine to connect. AirPods link to my phone and mac perfectly, but when switching to the watch it always says "unable to connect". It's probably caused by watchOS 3.1.1 to be honest, as I installed it before it was pulled.

One thing I have noticed however, if you're using AirPods with the phone, and a call comes through; pressing "answer" on the watch automatically hands the call off to your phone and AirPods. Normally, without AirPods in use, answering the call causes it to use the watches speaker, and manually handing off just puts the caller on hold until you pick your phone up and answer.

If there was one thing I would've requested for the AirPods/watch relationship, it's exactly his functionality. I've missed this since owning a pebble years ago.

EDIT: For anyone who gets the issue I mentioned, a restart of the phone seemed to fix it. Works fine now.

I'm keeping one Airpod on during a work day, playing some soft background music. I hardly notice that it's in my ear.

Switching to a call on the Airpods seems to be transparent an easy to switch.

I'm still developing some phone etiquette and finding that the sound quality is clear in a quiet environment.

Question...lets say that Airpods are connected to iPhone and playing music. Can you use Watch controls to control music (volume, skip songs)? In other words, the music is from iPhone to Airpods, but can you use Watch for controls instead of relying on Siri?

Yes you can. The Watch has a "now playing" app that lets you pause, go back and forward as well as change the volume with the digital crown or on-screen controls.
