I will have my iphone x paid off in about 7 months and even though I could upgrade I chose not too. My question is when it is paid off do I sign back up for Applecare or does it just end?

Applecare coverage starts from the day you purchase the phone. It ends whenever the coverage length is for your country. In the US that would be one year. Applecare+ extends this coverage to two years.
If you opted for the 24 month payment plan with Applecare+. Your coverage ends at the end of your payment cycle. Assuming the last payment is exactly two years from the date of purchase.
