I have an unused applecare for 21/27 inch iMac - will I be able to use it on M1 imac ?

I believe it's still true that Applecare+ goes with the machine, not the owner. So it can be transferred to a different owner if the machine is sold, but can't be transferred to a different machine/same owner. You can, however, call Apple Support, ask for the AppleCare Administration Dept. and request a prorated refund minus the value of any service under the contract.

Edit: Just found the refund paragraph in the Terms and Conditions:

"(b) If you cancel more than thirty (30) days after your receipt of this Plan, you will receive a pro rata refund of the original purchase price. The pro rata refund is based on the percentage of unexpired Plan Term from the Plan’s date of purchase, less (i) a cancellation fee of twenty-five ($25) dollars or ten percent (10%) of the pro-rata amount, whichever is less, and (ii) the value of any service provided to you under the Plan."

@WildSky - I have a spare applecare plan (the actual booklet with code) for non M1 imac's and I was wondering can I have this used on the M1 - which now has the Applecare+ option at checkout. I don't need refund etc :)

I don't know the answer to that. You could try registering it with that code to see if it works, or call the AppleCare Admin Dept.

With that extra information, the old unused plan won’t work with the new M1 as the M1 plan is different than the older plans.
The plans are based on purchase date, not the models. Because you can still buy a new or refurb Intel Mac, the AppleCare plan is the same as for an M1 Mac. The archived plan terms and conditions are still available to view here. To my knowledge an unused AppleCare plan doesn't expire, but it's really a question for the AppleCare team to answer.

I hope so as I was able to registered some very old applecare on the latest imac few year back.
