When it comes to overall application stability (and OS stability) for Mac OS X compared to Windows XP, my experience has been about the same for both of them.
I get application crashes, freezes, hangs, and unexpected quits all the time, on both Mac OS X and Windows. Of course, some applications crash more than others do. However, Mac OS X applications tend to recover from these events more gracefully than Windows applications - most of the time, a Mac OS X application will work normally after crashing if it's simply reopened. Windows applications sometimes work immediately, sometimes need to be restarted twice before working normally, and sometimes require a restart of Windows before working.
As far as operating system failures go, both Mac OS X and Windows have been pretty much rock solid, with 0 blue/gray screens of death reported so far.
