new to OS X so might be a simple solution but why is it when i install some programs they dont allow me to delete the installer dmg file?

For example, Adium wont let me delete its dmg and on the finder adium is listed under devices.

That means you haven't actually installed it properly. When you get that icon on the desktop, that's the disk image in it's expanded and mounted form. You then need to drag the application from there to your Applications folder, then drag that volume and the .dmg file to the Trash. Then the app is fully installed and the installer files will be gone.

You're confusing the .dmg disk image file with the virtual disk named "Adium". Without the .dmg file, the virtual disk wouldn't exist. You need to copy the application icon from the virtual disk to your Applications folder (or somewhere else). Then you can eject the virtual disk (in the Finder sidebar click on the small eject symbol next to it under Devices). Then you can trash the .dmg file if you don't plan on needing to reinstall it. Finally, you can drag the app icon from the Applications folder to the left side of the dock to create a dock icon.

Hope this help.
