I'm accustomed to moving apps in iPhone or iPad from screen to screen and doing other manipulations in iTunes. There is no longer an Apps option under settings in iTunes. Apple support tells me it's no more and to go back to doing these things on the device itself. Is this true? If so, what a bummer.

App management in iTunes was always a bit clunky. Only slightly less clunky than it was on the actual device. In iOS 11 you can now pickup multiple apps and move them around as you like. Start moving one app and then touch others to pick them up. Makes moving apps around quite a lot easier.
