do you really get double the performance with 20 core or is it more useful to have more GPU cores?

It makes sense (to me at least) to have more GPU cores. For video editing, a powerful GPU is necessary. Unless you're doing CPU AND GPU-intensive tasks, you should make GPU cores a priority in terms of your purchase.

M1 Max Cinebench = ~14,000
M1 Ultra Cinebench = ~24,000

So no, you're not getting double the performance given this metric. Someone correct me if I'm wrong.

The answer entirely depends on the app. Some apps have no benefit to more GPU and CPU cores because they can't "thread" out their tasks to that many cores; some apps have an improvement bordering on 1:1 improvement per core added.

The best solution is to check with the vendor of the software you use, and check the written reviews of the Max and Ultra, to determine the benefit.

I do note for many things there's diminishing returns, fast, in the Ultra. That said, it does have double the ProRes encoders, if that's your thing...
