I've tried using several of them, and all are just semi-functional iOS copies in tiny windows that are not very fun to use. Are there any apps that were fine-tuned to give a proper laptop experience?

Plenty. That's called Catalyst and it's available on Intel Macs too, because even though it's the same codebase as the iOS app, it's explicitly made for the Mac as well. The iOS apps only on M1 are by their very nature not optimised for the macOS desktop; If they were, they would be Catalyst apps.
The said the more of iPadOS' features the app uses the better it should work on macOS - so for instance using scenes may allow having open multiple windows of the app at once on macOS

The only one that I currently use consistently is the iPad version of podcasting app, Overcast. It is almost 100% adapted except it opens a blank window when clicking through on a link. Resize works great.

Some apps don't need to be "properly adapted", some just work out of the box. For example the one I use the most, Bell Fibe TV, works perfectly out of the box.
