Im in the UK so I cant try this out myself, can someone with a iPhone just check this? Is it true that every time you finish watching a video it asks if you want to delete it? If so can it be turned off?

Yes, it does ask if you wish to delete the video or movie.
As far as I know, there is no way to turn that off. It can be somewhat useful for this BUT if you delete the video and forget about unchecking that video in iTunes, iTunes then syncs it back onto the iPhone.

This is actually getting annoying. I liked the "delete" prompting for podcasts because those aren't really things I want to keep after watching them... or at least not usually. In fact, iTunes is smart enough not to sync that episode again once you've watched it on the iPhone and chosen to delete it via the "keep/delete" dialog.
I have a couple music videos and it never asks me if I want to delete them. Makes sense.
BUT, I have some home made movies (stuff I made in iMovie) that I synced, and it always asks me if I want to delete.
I think these should be treated more like music videos and less like podcasts.
Come to think of it, I would never actually want to just delete something off the iPhone if it synching won't also be disabled for that item in iTunes. Because, say I'm away from my computer for a few days. I watch some videos. I delete them to "free up space" (in the words of the iPhone.) What good did that do? Now I've got an extra 2 GB on my phone, but since you can't actually download files or trade files with others over bluetooth or wifi, or even create content, why would I be so concerned about freeing up 2 GB? It wouldn't benefit me until I got back to my computer and synch again anyway.

Lets hope its fixed in a update or hack. One more thing, if I rip a DVD to the iPhone will it ask me to delete all the time or not?
To me it's not a big deal. Pressing an extra button after a 2 hour movie is not really a problem. I guess I'm not in big enough of a rush to be annoyed by the half second it takes to click the "keep" button.
Im just worried about what will happen if I tap the wrong button and im on holiday for 2 weeks so im unable to sync.

Have you tried to change your video's type? In iTunes, select the video, then type Apple-I to get info, then change the "Video Kind" (under the Video tab) to Music Video. I haven't tried it, but if you say it doesn't ask you if you want to delete Music Videos, it seems you can change the Video Kind of your other videos to Music Video.
If you try it, can you let us know if it works?
OK, sorry it took me a few days to try this. BUT, as you suspected, it won't ask to delete my home made video any longer now that it is flagged as a "Music Video."
Couple of gotchas though- you have to set an "Artist" (I just used my own name.) If you don't do this, I wasn't able to find a way to actually play it on the iPhone because it won't show up under the "Video" icon. It shows up under music I think, and you can play it, but you get a still frame instead of the video. The way this works on the phone is a little goofy. You can see music videos along with your audio content, but it won't play right unless you actually browse to the video via the "Video" button.
Also, as you might expect, my home made video no longer shows up in iTunes under "Movies." It is hard to find actually unless you have the smart playlist set up for Music Videos.
Here is what I think creates all the mess. Check the type attribute for a podcast. It is set to "Movie"! Because there are only three choices, Movie, TV Show or Video. I think podcasts need their own category. Probably didn't matter much until the iPhone came along, I guess.
