The UPTab USB-C Type C to Mini DisplayPort Adapter seems to be the most recommended way to connect an Apple LED Cinema Display to a 2018 Mac Mini.

Why wouldn't I use the Mac Mini's HDMI port, instead (e.g. with something like this)? Just for one thing, it would leave me with more open USB ports.

What you referenced is mDP port to HDMI monitor. Doesn't work the other way. HDMI to mDP adapters are rare.
