I do not have an ATV yet, as I need to know if I can accomplish this setup before I make the purchase.

Can I use an ATV3, and use a 3rd party cord which will allow me to have an RCA output from the ATV3?

If I can do that above (I assume the answer is yes, but the quality will be reduced), how will the output look if I use an iPad 1 or 2 and use AirPlay to stream non-HD content to the projector? For example, I would use Keynote to show my students a presentation, but I would be able to be anywhere in the room while presenting.

I believe this should work (someone else chime in though). Note though that you won't be able to play any DRM media on the projector because of the lack of content protection in analog video cabling. THIS is an adapter from monoprice that should work.

Alternative - Do you have a computer in your classroom? If so, HERE is an app that basically allows you to use the computer as an Airplay target (instead of an ATV). If the classroom is already wired to allow the computer to work through the projector, this should be a pretty good solution. Airplay mirroring only works on the iPad 2 and 3 though, so the 1 won't do it.
 
In the classroom

All I have in the classroom is a Windows XP PC, So that App wont help me here, but I'm going to try it at home with my MacAir.
