I see that there is an option within iTunes version 12 of Automatically backing up to iCloud but after selecting that option (as opposed to the other option of "This Computer"), I don't understand how my iPhone, which is connected to iTunes right now, is being backed up to iCloud. Can someone explain this?

The setting has nothing to do with iTunes really, it's just telling you that iCloud backup is switched on for your iOS device. iCloud backup is performed as it always has - device is locked, plugged in (not necessarily to iTunes) and on Wi-Fi.
 
Thanks!! So changing it doesn't really do anything? E.g. changing it to This Computer?
 
Sorry, perhaps saying it has "nothing to do with iTunes" was a bit literal because if you do change the option to "This Computer" then the device will stop doing iCloud backups. Your only option for backup in this case is when you plug it into iTunes. iCloud backups occur whenever the device is plugged in and charging (and locked) - doesn't have to be connected to iTunes.
