Are those temps with stock thermal paste? Those numbers are crazy low.
I haven't done anything to my MacBook but replace the hard drive with a 100GB Seagate Momentus 7200RPM and upgrade it to 2GB of OWC RAM. Other than that, it's a stock 2.0GHz, white MB that I purchased from my local Apple store. As I said, I have it on a Griffin iCurve, which elevates the computer about 6" above my desktop. I have yet to see it get above 73C...
Regarding fan noise: Yes, when the fans come on you can definitely tell in a quiet room; however, personally, it doesn't bother me. In fact it makes me feel better that the thing actually recognizes that it needs to cool itself. The fans don't usually kick in unless the lappy has been at 68-70C for an extended period of time and even then, they seem to cool it off quick enough to the point that they don't stay on very long. BTW, I'm using CoreDuoTemp 0.9 for my temperature measurements...
EDIT: To give you a feel for it, I have had my MB on for 11 minutes while surfing the web and checking email and it is sitting very comfortably at 37-40C (slight fluctuation) as I type this...
