On my X, I am setting up from scratch, always do...I have my layout and password, on a word document and I can usually set the thing up in 60 minutes. I have a it down to a science. But I have questions...

1) I use iCloud the back my photos. I just went into storage on my 7 and it says 44gb. Id love tube able to use iCloud just to backup my photos.I'd like to avoid the 44gb of old photos being downloaded to my new phone. Any way to do that?
2) Assuming the answer is no, I hate having to stay in the hour for HOURS while 44gb of photos and videos restore. What happens if I leave wifi and return and in the middle of everything being downloaded the phone?
 
"Settings", "Photos", "Optimise iPhone Storage".

Turn that on before synching. That will only then store a (very) low resolution copy until you select a photo, at which point it will pull the higher resolution version from iCloud.

That might do what you want, and avoid downloading the 44GB?

I have a question, how do you reinstall all your apps - one by one from the App Store? I am wondering if you have another method since it seems you do the clean install very quickly. Thanks!

So you do you do you use iCloud Photo Library or just iCloud Backup?

When I want/need to start from scratch I print the screen on all pages. They all sync to iCloud and then I just check the list on my Mac. Going from the first app on the first page to the last. This way they will mostly be in correct order. Doing it through the App Store is pretty quick. With suggestions and just tapping the cloud button and then just jump to the next one.

I take a couple of screen-shots of my old phone so I know my order and then I have a Word Doc with all my passwords. I download each app from the app store...it's quicker than you think it would be.
