What's the consensus of opinion for having things like screen protectors and cases on your Apple Watches? Are they worth it in general?

If you have a job or hobby that could result in banging the watch against something, I'd say it'd be worth your while to get 'em.

If you have the Aluminum Series 4 watch and don't' want the screen scratched then get a screen protector. No matter how careful you are with it, the screen will scratch on those models. The stainless steel model has much harder glass and I've never scratched any of mine no matter where I've worn them.

Weird. I've got a Aluminum Series 0 that I've been wearing daily since the Apple Watch came out, and the screen has no scratches.

If you're working in a job where your wrists take lots of hard collisions with things, then consider a screen protector and/or case. For anyone else, I'd say don't bother. It needlessly bulks up and uglifies a nice smartwatch. My iPhones are always in cases (the Apple silicone cases), and they've been dropped numerous times without a single scratch (and of course no glass damage), but my Watch has never had any sort of covering (and it's been knocked into numerous things along the way).
