I have just took delivery of my new 2012 MacBook Pro after being a lifelong Windows user (Thank God)
I took this upgrade at this time as my old laptop had a corrupt hard drive and motherboard. This means that I have lost the back-ups from my 4S.
I am not that bothered about keeping everything on my Jailbreak, however, this would be nice if i could find a way of backing up into itunes as if it were my old backup from my Laptop. Is there a simple way of doing this?

Sync your phone to iTunes. There will be a backup for it after that. I transferred by iTunes library from my PC to my MacBook using an external HD as well, but it may be too late for that for you if your old PC is fried. Good luck!
 
I know you said you have a corrupt HD on your old computer, but I would suggest an adabpter (sata/IDE to USB) and plug the old hard drive into your new computer. Maybe you can still access some/all of the files on it. I do it all the time at work and I'd say 80% of the time I can recover all of the files.
