What has happened to the ‘speeding up’ when using backspace.
It used to do a letter, then increase to a word.
It now goes slower the longer you hold it.

Can't say I've experienced that, it airplane speeds up to go by word rather than character after a little bit.
 
If you're having to hold the backspace button down long enough to annoy you like that, perhaps it would improve your workflow to learn how to select text. Selecting text can be much faster than sitting and holding the backspace button to delete several words.
 
Odd, I wonder why it still works the way it did before for me in iOS 13.
I even did a DFU restore using iTunes and set up as new without using my backup and it’s still the same. I’ve had persistent keyboard issues including not inserting the whole word chosen on the predictive text suggestion selection and deleting the last letter of a sentence when adding punctuation.. I figure it’s just a minor bug compared to what others are experiencing so it’s not a big deal to me. The restore did give me a big improvement in battery performance so it wasn’t a total loss
