Backup a backup?

Hey,

I need to reinstall windows on my machine and do not want to lose the backups iTunes has made of my iPhone. Can I just copy them to another computer and when I reinstall iTunes copy them back?

Also what will happen when I plug in my iPhone to a newly installed iTunes? Will it erase all I have on my phone and start fresh? And if it does start fresh and I sync my contact and e-mail with MobileMe will it sync back my contacts/e-mail from MobileMe down or erase my MobileMe stuff with nothing from the iPhone up (if that made any sense).
