Backup and restore GM via iTunes?

Hi all, I have the GM installed and would like to do a fresh install at this point.

Can the GM be backed up in iTunes and successfully restored from this backup after a full "Erase All Content and Settings"?

Will the beta certificate have to be re-installed?

Or do I just wait until 11 is released and deal with it then...
