Okay, last night i backed up both of our phones on itunes to be ready to upgrade today. My wife's phone was still on the last iOS, maybe 8.3. Will that backup restore to the iphone 6s when we bring it home? I'm concerned because its older iOS. If not, do I need to go home and update her to new iOS, then backup, then go get upgrade?

Should be ok. Problem is usually other way around. If backup is 8.4.1 but new phone is 8.3. But I didn't have that with 6s which is 9.0 and backup was 9.0 1

would the phone then ihave ios 8 on it once restored? Obviously would upgrade to 9.0.1 then. just curious.

No, iPhone 6s comes with iOS 9 so it would stay the same. The backups are of the data and not the OS.

If you want to keep all the wifi passwords etc so you won't have to re-enter those on the new phone, use an encrypted backup
