are you using Super Duper or Carbon Copy Cloner (paid third party apps) or just Time Machine? If the former they both have scheduling, if the latter you can use Time Machine Editor (free)

 
If you're asking about iCloud Backup, no, it will do it randomly when your device is plugged into power, connected to wi-fi, and locked. You can do it manually though too.

The OP is asking about iOS 14, not Mac backups.

It's irritatingly not possible. My routine is to plug my phone in to charge overnight, at which time I also turn it off.

Backups only run automatically when the phone is connected to WiFi, and on the charger.

Any attempt to use the relatively-useless Shortcuts Automation function just ends up doing nothing apart from prompting me to do a backup at whatever time I try to automate it for.

I have a shortcut that goes into the backup screen, with that shortcut on a homescreen widget. This at least reminds me to run it regularly-ish.
 
How did you do it?
A very simple shortcut, but you still need to click "Back Up Now" to actually do the backup.
