For the life of me I can't find anywhere the backup settings page that allows you to select what you want to backup on iOS11. Can someone tell me where it went if it even still exists?

Settings > Apple ID (your name at the top) > iCloud (if you want to go deeper you can tap on Manage Storage and then on Backup there to select a particular backup to see and change what's backed up there)

I went there but I can't find where like on iOS 10 it let you choose what to back up, say Photos for instance.

If you go deeper into Manage Storage and then tap on Backup and then actually select the latest backup from the Backups section, when that loads it will show the "Choose Data to Backup" section where you can enable/disable different items.
