Ok, sorry if this sounds really dumb, but I just downloaded and installed the iPhone SDK and can't seem to find where/how to open the program. I probably shouldn't be attempting to develop apps if I cant figure this out, but if anyone could help me out, it would be greatly appreciated. I've been searching finder for quite some time now.

I found Xcode previously, however when I open it , it closes immediately. Do I need to install all those little packages that came with the download? Or are those optional?

Does the menu bar at the top belong to XCode? It's probably running, with no windows open. Select File->New Project... to create a project and you'll see some windows.
