I have bought applecare for my Macbook. When my batery health goes down to a low ammount, and the batery life dimminishes, will I be able to get a new battery from applecare?

No, they don't cover batteries that have more than a certain amount of charge cycles (I think it's 300). I actually went to a Genius Bar about this, and that's what I was told. If you're nice though, you may be able to buy a battery as a replacement part (which is a bit cheaper than just buying one off the shelf)

Easy. Just go to the Apple Menu and choose "About This Mac." From there click on "More Info..." This will bring up the System Profiler application. Click on "Power" in the left pane. Under "Battery Information" you will see a value called "Cycle Count." This is the number of cycles. Point of reference, I have had my Macbook since 9/06 and I have 164 cycles as of today (5/07) and 4403 mAh as my full charge capacity.
