Hi, due to my work i need to drive for about 6-8 hours a day and I need to use the Waze app while i drive. Would it be better (for the iphone’s battery) to keep the iphone plugged to my portable charger while i work (its a big and fast charger) or let the iphone’s battery drain every time and afterwards charge it?

You can charge your iPhone whenever you want. In fact, it's bad for the device to drain completely before charging on a regular basis.
 
Given that most carplay head units on the market require the phone to be plugged in (and thus charging - few support wireless carplay), i'd say apple have taken that into account and plugging in will be fine.

I use carplay almost every day and am plugged in whilst doing it.
